We got different maple syrups when we went snowboarding in Vermont. This one was our favorite. Had to get more once we ran out. So happy we could order from here. CAN SOMEONE TELL ME WHERE TO GET INORGANIC VERMONT MAPLE SYRUP,? PERHAPS SUGAR FREE SALT? GLUTEN FREE SOY BEANS?
While all pure Vermont maple products are naturally organic, there are some differences between the conventional and certified organic options.
When we make the syrup, the sap boils very violently. We have to add a very small amount of vegetable oil to keep the pans from turning into a volcano. In conventional maple syrup, we use a conventional vegetable oil. In certified organic syrup, we use a certified organic oil. In either case, the amounts used are about 1 pint of oil to 1000 gallons of finished syrup. The most commonly used oils are safflower, canola and vegetable blend.
There are other facets to the organic certification process. They involve working with a forester to create a forest management plan, no use of chemical herbicides or pesticides. Even things that seem minor, like not using pressure treated lumber to build our bridges and tubing infrastructure. We also rigorously track all the sap, oils and other ingredients added to make things like the maple bark and mochacinno bars.

I learn so much from the regular newsletters that come from Mount Mansfield about their products. In one of the newsletters they had suggested trying the light version of their maple syrup for homemade ice cream. Until now, I had been using an organic dark version from a different supplier. I enjoy using maple syrup to sweeten vanilla ice cream, but found that the dark flavor was too strong and could conflict with other flavors I would try to add for different ice cream recipes. I tried the Mount Mansfield light organic maple syrup and my vanilla ice cream was pure perfection. Best homemade vanilla ice cream I have ever made. The flavor profile was absolutely perfect. Now, I can make other flavored ice creams using this base without having to worry about flavor conflicts. I am predicting a yummy summer of fabulous homemade ice cream thanks to Mount Mansfield!
