Every year after the sap lines are flushed out and the evaporator pans have been seasoned, we always enjoy what we call First Run Syrup.  This syrup is produced at the beginning of the season when the trees are still mostly frozen, and a thick layer of snow blankets the forest.  The sap arrives at the sugar house cold and crisp, just above the point of freezing.  We allow the sap to age in our tanks until the time is right for boiling.  The smell inside and outside the sugar house as we boil this First Run Syrup is incredible.  There is an excitement and anticipation as we draw this off the evaporator as the flavor of first run is unique from year to year, yet always in a class of its own. 

Our 2021 First Run Syrup has an Amber Color towards the lighter end of the grade with a clean maple taste and smell.  The flavor is almost delicate, with no distracting tones.  It is maple in its purest form and simply beautiful.
